Hearty salad from your fridge and pantry
Whip up a delicious and hearty salad using fresh ingredients from your fridge and pantry. A perfect blend of flavors that will tantalize your taste buds.
Ingredients:
- • 2 cups rice fresh cooked or leftover
- • 1 tablespoon canola oil
- • 1 lemon or lime juiced
- • Zest of 1 lemon
- • 1 teaspoon salt
- • ½ teaspoons freshly ground black pepper
- • 4-5 chopped scallions
- • ½ cup mayonnaise
- • 1 can (430g) pink salmon, drained, flaked and chilled
- • 1 thinly sliced celery rib with the lives
- • 1 tablespoon chopped dill or parsley
- • ½ cup petted olives halved
Instructions:
- 1. Coat the rice with oil and fluff them up. If freshly cooked, allow to cool for approximately 1 hour. 2. Combine lemon juice, salt, pepper, scallions (setting aside a tablespoon of the green portion for later), celery, mayonnaise, and olives in a salad bowl. 3. Carefully fold in the rice, half of the salmon, dill, and lemon zest. 4. Transfer to a serving dish or an attractive shallow salad bowl. 5. Place the remaining salmon in the center. 6. Decorate with lemon slices or rounds, and scatter the reserved green scallions on top for garnish.
