- 1360g Yukon Gold potatoes, cut into ½-inch thick disks
- 1/4 cup apple cider vinegar

- 1/2 red onion, diced

- 1/4 teaspoon ground black pepper
- 1/4 cup cup water (use the water from boiling the potatoes)
Instructions:
- Put the potatoes in a medium pot and add enough water to cover them by a few inches. Cover the pot, bring the water to a boil, then lower the heat to a simmer. Let the potatoes simmer until they are tender enough to glide a knife through, which should take around 6-8 minutes. Since the potatoes are thinly sliced, be vigilant as they will cook quickly.
