Healthy orange and avocado salad

Discover the vibrant flavors of this nutritious orange and avocado salad. A zesty citrus dressing complements the creamy avocado in every bite.

Ingredients:

  • 2 tablespoon lime juice
  • 1 teaspoon red wine vinegar
  • 1 teaspoon honey
  • 2 tablespoon extra virgin olive oil
  • salt and pepper, to taste
  • 3 navel oranges
  • 2 ripe avocados
  • 1/2 red onion, thinly sliced
  • 6 cup baby spinach
  • hawaiian red sea salt or other finishing salt, to taste

Instructions:

  1. Combine lime juice, vinegar, honey, and oil in a bowl and mix well. Add salt and pepper to your liking. Set aside.
  2. Using a serrated knife, carefully remove the peels and white parts from the oranges. Over a large bowl to save the juices, separate the orange segments by cutting between the membranes with a paring knife. Slice the avocados, remove the pits, and cut them into thin pieces. Mix the orange segments and their juice with the sliced avocado, red onion, and lime dressing.
  3. Divide baby spinach onto plates and top it with the orange-avocado mixture. Sprinkle with Hawaiian red sea salt as desired. Serve immediately.
