Healthy mini cheesy meatloaves

Ingredients:
- 1 cup baby spinach
- 1/3 cup loosely packed fresh cilantro leaves
- 1 small clove garlic
- 340g extra-lean ground beef
- 230g 99-percent fat-free ground turkey
- 1/4 cup 2-percent milk
- 3 tablespoons whole-wheat breadcrumbs
- 1 teaspoon chili powder
- 1 large egg, lightly beaten
- 4 teaspoons Worcestershire sauce
- Kosher salt and freshly ground black pepper
- 2 teaspoons red wine vinegar
- 12 slices plum tomato (from about 2 small tomatoes)
- 5 tablespoons shredded Cheddar
- Green salad, for serving, optional
Instructions:
- Preheat your oven to 200 °C and prepare a baking sheet by lining it with parchment paper.
- In a food processor, mix together the spinach, cilantro, and garlic until they are finely chopped. Transfer this mixture to a medium-sized bowl. Add in the ground beef, ground turkey, milk, breadcrumbs, chili powder, egg, 2 teaspoons of Worcestershire sauce, 1/2 teaspoon of salt, and some black pepper. Using your hands, thoroughly combine all the ingredients.
- Combine the vinegar with the remaining 2 teaspoons of Worcestershire sauce. Shape the meat mixture into four equal 1-inch thick football shapes and place them on the lined baking sheet. Top each meatloaf with 3 tomato slices and drizzle some of the vinegar-Worcestershire mixture over them. Bake the meatloaves until they reach an internal temperature of 70 °C, which should take about 18 to 20 minutes. Drizzle more of the vinegar-Worcestershire sauce over the meatloaves, add Cheddar cheese on top, and continue baking until the cheese melts, roughly 2 more minutes. Pat the bottom of each meatloaf with a paper towel to soak up any excess moisture. If desired, serve with a side salad.
