Healthy mango and qunioa salad

Ingredients:

  • 1 large tomato, seeded and diced
  • 2 ears corn, kernels removed
  • 1 cucumber, peeled, seeded and diced
  • 1 mango, diced
  • 3 tablespoon finely chopped chives
  • 2 tablespoon lemon juice
  • 1/4 teaspoon grated lemon zest

Instructions:

  1. Wash quinoa in a small strainer until the water is clear, then drain and put it in a medium saucepan. Pour in 2 cups of water and let it boil. Cover the pot, lower the heat to medium-low, and let it cook until the water is absorbed, which usually takes 15 to 20 minutes. Remove from the heat and let it sit for 5 minutes without the lid; then, use a fork to separate the grains. Mix in the rest of the ingredients and stir until everything is evenly distributed.
