Healthy cheese tortellini salad with vegetables

Ingredients:

  • 9 oz package or cheese tortellini, cooked to package instructions
  • 1 cup cherry tomatoes, sliced in half
  • 4 teaspoons capers
  • 1/3 medium english cucumber, chopped
  • 2 medium carrots, chopped
  • 1/2 medium green peppers, chopped
  • 1/4 red onion, chopped small
  • 1 small summer squash, chopped
  • 1/3 cup fresh lemon juice (about one large lemon)
  • zest from one lemon
  • 1/4 cup olive oil
  • 2 teaspoons agave nectar
  • 1 teaspoon minced garlic
  • 1 teaspoon dijon mustard
  • 1 pinch salt
  • 2 teaspoons chives to garnish

Instructions:

  1. Prepare tortellinis and let them cool down
  2. Combine cherry tomatoes, capers, cucumbers, carrots, green peppers, red onion and summer squash in a spacious bowl.
  3. Mix all components for the dressing and keep aside.
  4. Combine the tortellinis with the vegetables in the large bowl and drizzle the dressing on top. Gently mix all the ingredients, taking care not to damage the pasta.
  5. Let it sit for a minimum of one hour before serving to enhance the flavors.
