Healthy cheese tortellini salad with vegetables

Ingredients:
- 9 oz package or cheese tortellini, cooked to package instructions
- 1 cup cherry tomatoes, sliced in half
- 4 teaspoons capers
- 1/3 medium english cucumber, chopped
- 2 medium carrots, chopped
- 1/2 medium green peppers, chopped
- 1/4 red onion, chopped small
- 1 small summer squash, chopped
- 1/3 cup fresh lemon juice (about one large lemon)
- zest from one lemon
- 1/4 cup olive oil
- 2 teaspoons agave nectar
- 1 teaspoon minced garlic
- 1 teaspoon dijon mustard
- 1 pinch salt
- 2 teaspoons chives to garnish
Instructions:
- Prepare tortellinis and let them cool down
- Combine cherry tomatoes, capers, cucumbers, carrots, green peppers, red onion and summer squash in a spacious bowl.
- Mix all components for the dressing and keep aside.
- Combine the tortellinis with the vegetables in the large bowl and drizzle the dressing on top. Gently mix all the ingredients, taking care not to damage the pasta.
- Let it sit for a minimum of one hour before serving to enhance the flavors.
