Harvest grains summer salad with trader joe's grain blend

Delight your taste buds with a refreshing Harvest Grains Summer Salad featuring Trader Joe's premium grain blend. Healthy, vibrant, and bursting with flavor!

Ingredients:

  • 1 packet of Trader Joes harvest grains
  • 2 1/2 cups chicken broth
  • 1 tablespoon butter
  • 4 corn on the cob
  • 1 cup milk
  • 2 cups chopped walnuts
  • 1/2 cup Extra Virgin Olive Oil (EVOO)
  • 1/2 cup freshly chopped basil
  • 1/2 cup freshly chopped cilantro
  • 1/2 cup freshly chopped mint
  • 3-4 tablespoons white wine or champagne vinegar
  • 1 lime, juiced
  • 1 lemon, juiced
  • freshly ground black pepper & salt, to taste

Instructions:

  1. Prepare 1 bag of Trader Joes harvest grains (produces 3 cups of a mix of Israeli couscous, red quinoa, orzo & split garbanzo beans) by cooking it in 2 1/2 cups of chicken broth, salt & 1 tablespoon of butter following the boiling instructions.
  2. Boil 4 corn on the cobs in a mixture of milk and water until it simmers for 6 minutes.
  3. Let both the grain and corn cool down after cooking.
  4. Mix together 2 cups of chopped walnuts, 1/2 cup freshly chopped mint, 1/2 cup basil, 1/2 cup cilantro, 1/2 cup of extra-virgin olive oil, 3-4 tablespoons of white wine vinegar, juice from 1 lime, juice from 1 lemon, and season with freshly ground black pepper.
  5. Cut the corn kernels off the cob and combine them with the cooled grains and herbs.
  6. Either serve immediately or refrigerate for consumption the next day!
