Harvest grains summer salad with trader joe's grain blend
Delight your taste buds with a refreshing Harvest Grains Summer Salad featuring Trader Joe's premium grain blend. Healthy, vibrant, and bursting with flavor!
Ingredients:
- 1 packet of Trader Joes harvest grains
- 2 1/2 cups chicken broth
- 1 tablespoon butter
- 4 corn on the cob
- 1 cup milk
- 2 cups chopped walnuts
- 1/2 cup Extra Virgin Olive Oil (EVOO)
- 1/2 cup freshly chopped basil
- 1/2 cup freshly chopped cilantro
- 1/2 cup freshly chopped mint
- 3-4 tablespoons white wine or champagne vinegar
- 1 lime, juiced
- 1 lemon, juiced
- freshly ground black pepper & salt, to taste
Instructions:
- Prepare 1 bag of Trader Joes harvest grains (produces 3 cups of a mix of Israeli couscous, red quinoa, orzo & split garbanzo beans) by cooking it in 2 1/2 cups of chicken broth, salt & 1 tablespoon of butter following the boiling instructions.
- Boil 4 corn on the cobs in a mixture of milk and water until it simmers for 6 minutes.
- Let both the grain and corn cool down after cooking.
- Mix together 2 cups of chopped walnuts, 1/2 cup freshly chopped mint, 1/2 cup basil, 1/2 cup cilantro, 1/2 cup of extra-virgin olive oil, 3-4 tablespoons of white wine vinegar, juice from 1 lime, juice from 1 lemon, and season with freshly ground black pepper.
- Cut the corn kernels off the cob and combine them with the cooled grains and herbs.
- Either serve immediately or refrigerate for consumption the next day!
