Ham, cheese & pear salad

Indulge in the delightful flavors of ham, creamy cheese, and sweet juicy pears in this savory salad bursting with culinary delights.

Ingredients:

  • 100g couscous
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 80g baby spinach
  • 60g rocket
  • 2 small pears, cored, quartered and finely sliced
  • 50g ricotta
  • 1⁄2 small bunch of chives, finely sliced
  • 1 lemon, zested
  • 4 thin slices of ham, shredded

Instructions:

  1. Place the couscous in a bowl that can withstand heat and add 140ml of boiling water. Cover the bowl and let it sit for 4 minutes. In the meantime, combine olive oil, mustard, vinegar, and honey in a separate bowl. Keep it aside.
  2. Mix the dressing with spinach, arugula, and pears. Fluff up the couscous using a fork, then gently incorporate it into the salad while it's still warm (this will cause the greens to slightly wilt). Split the salad between two plates.
  3. Stir together ricotta, 2 tbsp of water, most of the chives, and lemon zest. Spoon the ricotta mixture over the salad, along with ham and the rest of the chives. Optionally, add a sprinkle of black pepper.
