Gruyère grilled cheese with apple salad

Ingredients:

  • tablespoons unsalted butter, divided
  • /4 cup 1/4-inch-thick sliced shallots
  • teaspoon fresh thyme leaves
  • Kosher salt and freshly ground black pepper
  • 1/2-inch-thick slices country-style white bread
  • ounces Gruyère, sliced 1/8-inch thick
  • cups arugula
  • /2 apple (such as Pink Lady or Fuji), cut into 1/4-inch slices
  • tablespoons fresh lemon juice
  • tablespoons extra-virgin olive oil

Instructions:

  1. Preheat the oven to 200 °C. Melt 2 tablespoons of butter in a small saucepan over high heat until it starts to foam. Add shallots and thyme, then season with salt and pepper. Stir constantly using a wooden spoon or spatula until shallots become soft and caramelized, about 4 to 5 minutes. Remove from heat and set aside.Heat a large skillet over medium heat. Melt 1 tablespoon of butter in the pan and swirl to coat the bottom. Place 2 slices of bread in the pan and cook until they turn golden brown and crispy on the bottom side, which takes about 2 to 3 minutes. Transfer the bread slices, toasted side down, to a baking sheet with edges. Repeat the process with the remaining butter and bread slices. Distribute cheese evenly on top of the bread slices and add the reserved shallots on top of the cheese.Put the baking sheet in the preheated oven and bake until the cheese is melted, approximately 7 to 8 minutes.In a large bowl, mix arugula, apple slices, lemon juice, and oil. Toss well to coat everything evenly. Season the salad with salt and pepper to your liking.Press 2 bread slices together with the melted cheese sides facing each other. Cut the sandwich diagonally into halves and place on a plate. Repeat the process with the remaining bread slices. Divide the salad between the plates.
