Gruyere grilled cheese with apple salad
Indulge in the perfect blend of savory Gruyere, crispy apple slices, and fresh greens with this grilled cheese and apple salad combo. Delicious and satisfying!
Ingredients:
- tablespoons unsalted butter, divided
- /4 cup 1/4-inch-thick sliced shallots
- teaspoon fresh thyme leaves
- Kosher salt and freshly ground black pepper
- 1/2-inch-thick slices country-style white bread
- ounces Gruyère, sliced 1/8-inch thick
- cups arugula
- /2 apple (such as Pink Lady or Fuji), cut into 1/4-inch slices
- tablespoons fresh lemon juice
- tablespoons extra-virgin olive oil
Instructions:
- Preheat the oven to 400°. Melt 2 tablespoons of butter in a small saucepan over high heat. Once the butter starts to foam, add shallots and thyme, and season with salt and pepper. Stir constantly with a wooden spoon or spatula until the shallots begin to soften and turn golden brown, for about 4 to 5 minutes. Remove from the heat and set aside.
- Using a large heavy-bottomed skillet over medium heat, melt 1 tablespoon of butter at a time. Swirl the pan to coat the bottom with butter. Place 2 slices of bread in the pan and cook until they are crispy and golden brown on the bottom, which should take 2 to 3 minutes. Transfer the bread, toasted side down, to a baking sheet with edges. Repeat the process with the remaining butter and bread slices. Spread the cheese evenly on the bread and top with the reserved shallots.
- Put the baking sheet in the oven and bake until the cheese is melted, around 7 to 8 minutes.
- In a large bowl, mix arugula, apple slices, lemon juice, and oil. Toss well to ensure everything is evenly coated. Season the salad with salt and pepper to taste.
- Take 2 bread slices with melted cheese sides facing inwards, press them together, then cut the sandwich diagonally and place it on a plate. Repeat the process with the rest of the bread slices. Serve the sandwiches alongside the salad divided between the plates.
