Grilled wedge salad skewers

Ingredients:

  • 3 tablespoons crumbled blue cheese
  • 3 tablespoons sour cream 
  • 2 tablespoons mayonnaise 
  • 2 tablespoons buttermilk or milk 
  • 1 teaspoon white wine vinegar 
  • Kosher salt and freshly ground black pepper

  • 1 head romaine lettuce, cut into 2-inch pieces 
  • 18 cherry tomatoes
  • 1 tablespoon olive oil

Instructions:

  1. Mix together the blue cheese, sour cream, mayonnaise, buttermilk, and vinegar in a small bowl and stir until the mixture is well blended. Add salt and pepper to taste.
  2. Heat up a grill or grill pan over medium-high heat. Slide a few pieces of lettuce onto a skewer, followed by a cherry tomato; repeat this process twice so you end up with three lettuce bundles and three cherry tomatoes on each skewer. Continue with the remaining skewers.
  3. Coat both sides of the skewers with oil and lightly season with salt and pepper.
  4. Grill until slightly charred, flipping once, for about 1 to 2 minutes on each side. Place the skewers on a serving dish and drizzle with the blue cheese dressing. Serve right away.
