Grilled watermelon salad

Ingredients:
- 450g watermelon, sliced into wedges
- Olive oil, for drizzling
- Sea salt
- 1 cup pecans
- 1 cup sesame seeds
- 2 tablespoons coriander seeds
- 1/2 tablespoon fennel seeds
- Sea salt and freshly ground black pepper
- 1/2 cup good-quality olive oil
- 2 tablespoons honey
- 1 tablespoon molasses
- 1 tablespoon champagne vinegar
- 2 limes, zested
- 1 red onion, thinly sliced
- 1 cup sliced mini cucumbers
- 1 cup fresh mint, torn
- 1 cup feta cheese
- 2 avocados, cubed
Instructions:
- Heat up a grill or a grill pan on high temperature.
- Combine the watermelon with oil and sprinkle salt on it. Place it on the grill. Grill for about 3 minutes until distinctive grill marks appear on one side. Place on a large plate and refrigerate for approximately 30 minutes until cold.
- To make the pecan dukkah dressing: Put the pecans, sesame seeds, coriander seeds, and fennel seeds in a pan over low heat. Toast lightly until they become aromatic, around 7 minutes. Let it cool before transferring the mixture to a food processor. Add salt and pepper to your taste. Pulse until it reaches a grainy and blended consistency. Set it aside.
- Combine olive oil, honey, molasses, vinegar, lime zest, salt, and pepper in a bowl. Mix well. Stir in 2 heaping teaspoons of dukkah spice.
- Arrange the red onion, cucumber, mint, dukkah dressing, feta, and avocado on top of the watermelon. Sprinkle with additional dukkah spice and serve.
