Grilled watermelon and jicama salad

Ingredients:
- 30g pancetta, thin sliced
- 1/2 medium, (seedless) watermelon (about 4 cups cubed)
- 1 jicama
- 140g baby arugula
- 90g crumbled feta
- 1 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
- 1 tablespoon balsamic vinegar
- 1/2 tablespoon champagne vinegar
- 1/4 cup pickled red onion
Instructions:
- Arrange the pancetta slices on a baking sheet. Place the sheet in the oven before turning it on to 400 F. Bake until the pancetta turns golden brown and crispy, typically around 15 minutes based on the thickness of the slices. Let it cool down, then break it into pieces. Set it aside.
- Peel the jicama and then cut it into thin strips measuring 1/8" (do this by slicing the jicama into thin 1/8" rounds, stacking them, and cutting them into matchstick-like pieces). Keep it aside.
- If you are using a gas grill, preheat it on high heat. For charcoal grills, ensure there is a hot layer of well-burnt coals. Next, remove the rind of the watermelon using a serrated knife, leaving only the red flesh. It isn't necessary to use seedless watermelon, but if you choose not to, be prepared to remove some seeds while enjoying the salad. Slice the watermelon into approximately 1/2" thick pieces and place them directly on the grill.
- Grill the watermelon for about 3-5 minutes on each side until you see noticeable grill marks but the watermelon remains firm enough to flip easily. After grilling both sides, let it cool slightly, then sprinkle with 1/4 tsp of kosher salt and chop it into 1/2" cubes.
- In a large salad bowl, mix together the grilled watermelon, jicama, arugula, and feta cheese. Drizzle with balsamic and champagne vinegars, as well as the remaining salt and freshly ground black pepper. Add the pickled red onions and toss everything gently to combine.
- Top the salad with the crumbled pancetta before serving.
