Grilled tomato salad with mozzarella and unagi sauce

Try this savory grilled tomato salad topped with creamy mozzarella and drizzled with flavorful unagi sauce. Perfect blend of smoky, tangy, and sweet tastes.

Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sugar
  • 2 tablespoons soju or sake
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • Salt
  • 2 green (unripe) tomatoes, sliced 1/4 inch thick
  • 1 tablespoon canola oil, plus more for brushing
  • 2 cups yellow grape tomatoes, 1 cup halved
  • 450g fresh mozzarella cheese, sliced and torn into bite-size pieces
  • 3 tablespoons thinly sliced basil
  • 3 tablespoons chopped mint

Instructions:

  1. Combine soy sauce, mirin, sugar, and soju in a small saucepan and bring to a boil. Stir and simmer over medium heat until the mixture reduces to 1/4 cup, approximately for 12 minutes. Allow it to cool completely, then mix in mayonnaise and lime juice. Season with salt.
  2. Start a grill or preheat a grill pan. Coat the green tomatoes with oil and salt. Grill over high heat, flipping once, until they are slightly charred, which takes about 4 minutes. Place them on a plate to cool before cutting them into quarters.
  3. In a grill pan with holes, mix the whole grape tomatoes with 1 tablespoon of oil and salt. Grill over high heat, stirring occasionally, until they are slightly charred, which takes around 2 minutes. Let them cool for a bit.
  4. Combine mozzarella with all the tomatoes on a platter. Pour 1/2 cup of the unagi sauce over the salad and sprinkle basil and mint on top. Serve the salad and provide the remaining sauce at the table.
