Grilled tomato-and-scallion salad

Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1/2 medium onion, sliced
- 2 cloves garlic, minced or crushed
- 230g mushrooms, sliced
- 5 to 6 green onions, sliced into 1-inch pieces
- 2 teaspoons soy sauce
- 1/2 teaspoon sesame seed oil
- 1/2 teaspoon crushed red pepper flakes
- Kosher or sea salt, to taste
- Fresh cracked black pepper, to taste
Instructions:
- Place a large skillet on the stovetop over medium-high heat. Pour in the oil and then mix in the onions. Saute for approximately 2 minutes or until the onions become tender.
- Incorporate the garlic, mushrooms, and green onions into the skillet. Stir occasionally until the mushrooms are cooked through and have a slight golden color, which should take about 3 to 5 minutes.
- Add the soy sauce, sesame seed oil, and crushed red pepper flakes to the skillet. Heat the mixture until warmed through.
- If preferred, add salt and pepper to season the dish.
