Grilled tomato-and-scallion salad

  • 5 to 6 green onions, sliced into 1-inch pieces
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sesame seed oil
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher or sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions:

  1. Place a large skillet on the stovetop over medium-high heat. Pour in the oil and then mix in the onions. Saute for approximately 2 minutes or until the onions become tender.
  2. Incorporate the garlic, mushrooms, and green onions into the skillet. Stir occasionally until the mushrooms are cooked through and have a slight golden color, which should take about 3 to 5 minutes.
  3. Add the soy sauce, sesame seed oil, and crushed red pepper flakes to the skillet. Heat the mixture until warmed through.
  4. If preferred, add salt and pepper to season the dish.
