Grilled tofu and lettuce salad with fresh peas and roasted cashews

Delight in a flavorful mix of grilled tofu, crisp lettuce, sweet peas, and crunchy roasted cashews in this refreshing salad. Perfect for a light and satisfying meal.

Ingredients:

  • 1 romaine lettuce
  • 300 grams fresh peas
  • 200 grams natural tofu, 2x 100 gr slices
  • 200 grams raw cashews
  • 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 3 tablespoons honey
  • sea salt

Instructions:

  1. Preheat the oven to 200 degrees Celsius.
  2. Remove the peas from the pods and keep them aside.
  3. Cut the lettuce in half and drizzle the exposed side with 2 tablespoons of vinegar, 1 tablespoon of olive oil, and a pinch of salt and pepper.
  4. Coat the tofu slices with 1 tablespoon of olive oil, 2 tablespoons of honey, and 1 teaspoon of chili flakes.
  5. Heat a skillet on high heat.
  6. Cook the tofu for approximately 4 minutes on each side until it turns golden and crispy.
  7. Season the cashews with a pinch of chili flakes and 1 tablespoon of honey. Roast them in the oven for 10 minutes until they are golden and crispy.
  8. Remove the tofu slices and grill the lettuce, with the cut side facing down, for 1 minute.
  9. Begin plating by arranging the lettuce with the cut side facing upwards. Place the tofu on top. Take the roasted cashews out of the oven and sprinkle them over the lettuce and tofu. Add the peas.
  10. Garnish with fresh mint and squeeze half a lemon before serving.
