Grilled steak and tomato salad with rum vinaigrette

Ingredients:

  • 450g flank steak (or steak of your choice)
  • 2 teaspoons olive oil
  • Salt and freshly ground pepper
  • 450g cherry tomatoes (or tomatoes of your choice)
  • 2 teaspoons olive oil
  • 1 shot (3 tablespoons) good-quality rum
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • salt and pepper
  • 1 head lettuce

Instructions:

  1. Heat up the grill on high temperature. Brush a bit of oil onto the steak and cook it on the grill for 5 to 7 minutes on each side until it's medium-rare. Sprinkle salt and pepper on the steak right away. Allow the steak to rest as you get the salad ready.
  2. Brush oil onto the tomatoes and grill them for about 3 to 4 minutes.
  3. Mix rum, apple cider vinegar, mustard, and olive oil to create the dressing. Season it with salt and pepper.
  4. If you're working with flank or skirt steak, cut the steak perpendicular to the fibers. Arrange the steak and grilled tomatoes over lettuce and coat everything with rum vinaigrette.
