Grilled steak and tomato salad with rum vinaigrette

Ingredients:
- 450g flank steak (or steak of your choice)
- 2 teaspoons olive oil
- Salt and freshly ground pepper
- 450g cherry tomatoes (or tomatoes of your choice)
- 2 teaspoons olive oil
- 1 shot (3 tablespoons) good-quality rum
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 3 tablespoons olive oil
- salt and pepper
- 1 head lettuce
Instructions:
- Heat up the grill on high temperature. Brush a bit of oil onto the steak and cook it on the grill for 5 to 7 minutes on each side until it's medium-rare. Sprinkle salt and pepper on the steak right away. Allow the steak to rest as you get the salad ready.
- Brush oil onto the tomatoes and grill them for about 3 to 4 minutes.
- Mix rum, apple cider vinegar, mustard, and olive oil to create the dressing. Season it with salt and pepper.
- If you're working with flank or skirt steak, cut the steak perpendicular to the fibers. Arrange the steak and grilled tomatoes over lettuce and coat everything with rum vinaigrette.
