Grilled shrimp orzo salad

Ingredients:
- 15–20 shrimp (peeled, de-veined, and patted dry)
- Badia Complete seasoning
- Olive oil
- 1 cup uncooked orzo, cooked according to the package and drained
- 2–3 cups of fresh spinach
- 1 small container of cherry tomatoes (halved)
- 1 large green onion (thinly sliced)
- Juice from half a lemon
- Salt and pepper
Instructions:
- Season the shrimp evenly with Badia Complete seasoning. Preheat a grill on medium high heat and lightly coat it with olive oil to prevent sticking. Grill the shrimp until they turn pink, making sure not to cook them for too long.
- In a spacious bowl, mix together orzo, spinach, cherry tomatoes, and green onions. Incorporate lemon juice and a generous amount of olive oil to cover the mixture. Stir thoroughly, add salt and pepper to your liking, then place the grilled shrimp on top. Cover the bowl and refrigerate for a minimum of one hour before serving promptly.
