Grilled shrimp and noodle salad
Delicious grilled shrimp paired with flavorful noodles in a refreshing salad. A fusion of savory and fresh ingredients for a culinary delight.
Ingredients:
- 400g flat rice noodles
- 1/2 cup fresh lime juice
- 1/3 cup fish sauce
- 1/2 cup packed light brown sugar
- 2 cloves garlic, finely chopped
- 1 to 2 teaspoons Asian chili sauce (such as Sriracha)
- 450g medium-large shrimp, peeled and deveined
- 1 medium bunch asparagus, trimmed
- 140g shiitake mushrooms, trimmed
- 1 medium carrot, shredded
- 1/2 cup fresh cilantro
Instructions:
- Start by bringing a large pot of water to a boil. Add the noodles and cook according to package instructions; then drain and rinse under cold water.
- While waiting for the noodles, mix together lime juice, fish sauce, brown sugar, minced garlic, chili sauce, and 1/3 cup of water in a medium-sized bowl. Take 1/4 cup of this mixture and combine it with the shrimp in a separate bowl. Toss another 1/4 cup of the mixture with the asparagus and mushrooms in a third bowl. Allow the shrimp and vegetables to marinate at room temperature for 10 minutes. Combine the noodles with the remaining marinade.
- Preheat a grill or grill pan to medium-high heat. Grill the shrimp, asparagus, and mushrooms until the shrimp is cooked through and the asparagus is slightly tender, about 2 to 3 minutes per side. Cut the asparagus into pieces and halve the mushrooms.
- Serve the noodles in bowls and top them with the grilled shrimp, asparagus, mushrooms, carrot, and cilantro.
