Grilled shrimp and feta salad

Ingredients:
- 450g large shrimp, peeled and deveined
- 1/3 cup extra-virgin olive oil, plus more for shrimp
- Kosher salt and freshly ground pepper
- 8 cups baby arugula (about 230g)
- 1 cup sliced cucumber
- 1/2 cup pitted kalamata olives
- 1/4 cup thinly sliced red onion
- 2 tablespoons fresh lemon juice
- 230g feta cheese, crumbled, for serving
Instructions:
- 1. Heat up a grill to a medium-high temperature. Coat the shrimp with a thin layer of oil, then season with salt and pepper. Cook on the grill until they are cooked, around 2 to 3 minutes on each side.
