Grilled salmon with peach and pickled onion salad

Ingredients:

  • 3 large shallots, thinly sliced
  • 3 tablespoons red wine vinegar
  • 2 large peaches, pitted and thinly sliced
  • 2 tablespoons chopped basil leaves
  • 1 tablespoon capers, drained and rinsed
  • 4 tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 6 (170g) center-cut salmon fillets

Instructions:

  1. Mix the shallots and vinegar in a big bowl. Allow them to soak at room temperature for half an hour. Then, put in the peaches, basil, capers, and 1 tablespoon of olive oil and mix well. Season with salt and pepper according to your preference.
