Grilled roasted garlic shrimp skewers

Delight in juicy grilled shrimp skewers bursting with savory roasted garlic flavor. A perfect fusion of smoky and zesty notes. Taste the goodness!

Ingredients:

  • 450g large shrimp, peeled, de-veined and tails removed (about 40 shrimp)
  • Salt and freshly ground black pepper
  • Salt and freshly ground black pepper 
  • 1 cup roasted garlic salad dressing
  • 2 teaspoons lemon juice
  • 1 teaspoon Italian seasoning
  • Canola oil, for grilling
  • One 5-ounce package baby arugula
  • 2 plum tomatoes, diced
  • 1 lemon, cut into wedges 

Instructions:

  1. Insert the shrimp onto the skewers, threading them through both the body and tail. The skewer should go through the top and bottom part of the shrimp, similar to the shape of the letter "C". Place 5 shrimp on each skewer. Arrange the skewers in a 9 by 13-inch baking dish and season lightly with salt and pepper.
  2. In a mixing bowl, mix together the roasted garlic salad dressing, lemon juice, and Italian seasoning. Set aside approximately 3 tablespoons of this dressing mixture. Pour the rest of the dressing over the shrimp and ensure all shrimp are evenly coated using a brush. Allow the shrimp to marinate in the refrigerator for 5 to 30 minutes.
  3. Preheat a grill or grill pan on medium-high heat.
  4. Grease the grill grates with canola oil by wiping them with a paper towel soaked in the oil. Place the shrimp skewers on the grill and cover. Grill until the shrimp turn opaque and are cooked through, which usually takes about 3 minutes per side.
  5. While the shrimp is cooking, mix the arugula and tomatoes in a large bowl. Drizzle the reserved dressing over the arugula, season with salt and pepper, and toss well to combine. Distribute the salad onto 4 plates. Plate 2 skewers of shrimp on each plate. Serve with a wedge of lemon on the side.
