Grilled red onion & watermelon salad
Indulge in the delightful flavors of a Grilled Red Onion and Watermelon Salad. This vibrant dish is a perfect harmony of smoky, sweet, and fresh tastes.
Ingredients:
- 1 large red onion
- 6 cups (48 oz) diced watermelon
- 1 large green pepper, medium dice
- 1 english cucumber, large dice
- 3 tablespoons chopped fresh mint
- 1/2 cup pitted kalamata olives
- 1/2 cup cider vinegar
- 4 tablespoons olive oil (optional)
- 2 teaspoons salt
- 1/2 cup feta (I prefer plant-based feta)
- 2 grilled pita (optional)
Instructions:
- Remove the skin, cut into thin pieces, and cook the onion on a grill until it gets a nice char and becomes tender, then cool it in the refrigerator
- Get the pepper, cucumber, mint, and olives ready and put them together in a bowl along with the grilled onion
- Include the vinegar and, if desired, olive oil, mix well, and season according to taste
- Sprinkle your preferred type of feta cheese (I recommend plant-based feta) on top and serve with grilled pita bread on the side
