Grilled red onion & watermelon salad

Indulge in the delightful flavors of a Grilled Red Onion and Watermelon Salad. This vibrant dish is a perfect harmony of smoky, sweet, and fresh tastes.

Ingredients:

  • 1 large red onion
  • 6 cups (48 oz) diced watermelon
  • 1 large green pepper, medium dice
  • 1 english cucumber, large dice
  • 3 tablespoons chopped fresh mint
  • 1/2 cup pitted kalamata olives
  • 1/2 cup cider vinegar
  • 4 tablespoons olive oil (optional)
  • 2 teaspoons salt
  • 1/2 cup feta (I prefer plant-based feta)
  • 2 grilled pita (optional)

Instructions:

  1. Remove the skin, cut into thin pieces, and cook the onion on a grill until it gets a nice char and becomes tender, then cool it in the refrigerator
  2. Get the pepper, cucumber, mint, and olives ready and put them together in a bowl along with the grilled onion
  3. Include the vinegar and, if desired, olive oil, mix well, and season according to taste
  4. Sprinkle your preferred type of feta cheese (I recommend plant-based feta) on top and serve with grilled pita bread on the side
