Grilled radiccio & endive salad with hazelnut dressing

Indulge in the delicious flavors of grilled radicchio and endive salad with a savory hazelnut dressing. Perfectly balanced and bursting with culinary goodness.

Ingredients:

  • 4 endives
  • 2 heads radicchio
  • 2 tablespoons hazelnuts, chopped
  • 1 clove garlic, diced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 2 tablespoons parmesan cheese
  • Pinch salt & pepper

Instructions:

  1. Preheat an outdoor grill or grill pan over medium-high heat. Cut the endives in half lengthwise and slice the radicchio through the core. Drizzle olive oil and sprinkle with a little salt and pepper.
  2. Cook until both sides are slightly charred, approximately 4 minutes for the endives, and 7 minutes for the radicchio.
  3. While the vegetables are grilling, prepare the dressing. Mix 1 tablespoon of hazelnuts, garlic, half of the lemon juice, olive oil, 1 tablespoon of parmesan cheese, salt, and pepper in a small bowl.
  4. When ready to serve, drizzle the dressing over the endives and radicchio. Sprinkle with the remaining hazelnuts, lemon zest, remaining parmesan, and additional salt and pepper.
