Grilled rack of lamb asian salad

Ingredients:
- 2 8-bone racks of lamb, trimmed and frenched
- 1 cup soy sauce
- 6 cloves of garlic
- 1 cup red wine
- 1/4 cup olive oil
- 2 tablespoons red curry paste
- 2 tablespoons chopped ginger
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 2 thinly sliced asian red peppers
- 4 tablespoons fish sauce
- 4 tablespoons fresh lime juice
- 1 tablespoon sugar
- 1 head of bibb lettuce
- 1/3 cup chopped cilantro
Instructions:
- Soak lamb in a mixture of soy sauce, minced garlic, red wine, olive oil, curry paste, minced ginger, and honey for 3-4 hours. Cook lamb on the grill until it reaches a medium-rare doneness.
- To prepare the salad, combine minced garlic, chopped chilies, fish sauce, freshly squeezed lime juice, and sugar in a small bowl. Arrange a layer of lettuce as the base on a serving platter. Place 2 lamb chops on top of the lettuce. Decorate with fresh cilantro leaves.
