Grilled rack of lamb asian salad

Ingredients:

  • 2 8-bone racks of lamb, trimmed and frenched
  • 1 cup soy sauce
  • 6 cloves of garlic
  • 1 cup red wine
  • 1/4 cup olive oil
  • 2 tablespoons red curry paste
  • 2 tablespoons chopped ginger
  • 2 tablespoons honey
  • 1 tablespoon minced garlic
  • 2 thinly sliced asian red peppers
  • 4 tablespoons fish sauce
  • 4 tablespoons fresh lime juice
  • 1 tablespoon sugar
  • 1 head of bibb lettuce
  • 1/3 cup chopped cilantro

Instructions:

  1. Soak lamb in a mixture of soy sauce, minced garlic, red wine, olive oil, curry paste, minced ginger, and honey for 3-4 hours. Cook lamb on the grill until it reaches a medium-rare doneness.
  2. To prepare the salad, combine minced garlic, chopped chilies, fish sauce, freshly squeezed lime juice, and sugar in a small bowl. Arrange a layer of lettuce as the base on a serving platter. Place 2 lamb chops on top of the lettuce. Decorate with fresh cilantro leaves.
