Grilled potato salad
Delicious grilled potato salad bursting with smoky flavors and vibrant colors. Perfect blend of tender potatoes, fresh herbs, and zesty dressing.
Ingredients:
- 7 small to medium red potatoes, scrubbed and quartered
- 1 sweet potato, peeled and cut into 1 1/2-inch cubes
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1/4 teaspoon cayenne powder
- Kosher salt and freshly ground black pepper
- Bacon-Green Onion Vinaigrette, recipe follows
- 1 slice bacon, cut into lardons
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh parsley
- 2 green onions, chopped
- Kosher salt and freshly ground black pepper
Instructions:
- Heat up the grill.
- Place the red potatoes in a large saucepan and add enough cold water to cover the potatoes by 2 inches. Bring the water to a boil over high heat. Add the sweet potatoes after the water starts boiling, which takes about 8 minutes. Boil for an additional 8 minutes. Drain the potatoes and let them cool.
- While the potatoes are cooling, mix together the mayonnaise, mustard, onion and garlic powders, cayenne, salt, and pepper in a medium bowl. Once the potatoes have cooled down, coat them with the mayonnaise mixture by gently tossing them.
- Using tongs, transfer the potato pieces to the hot grill and grill each side for about 1 to 2 minutes until grill marks form. Be gentle to prevent them from breaking apart.
- In a large bowl, place the Bacon-Green Onion Vinaigrette. Once the potatoes are fully cooked, take them off the grill and add them hot to the bowl with the dressing. Carefully toss the potatoes in the dressing until they are completely coated. Serve the dish warm or cold.
- In a small saute pan, fry the bacon until crispy, then let it cool. Once cooled, transfer the bacon and the fat to a small bowl along with the olive oil.
- In a separate small bowl, mix the vinegar and mustard. Slowly pour in the olive oil-bacon mixture while whisking to combine. Add parsley, green onions, salt, and pepper as per your taste, and whisk until well blended.
