Grilled portobello & red pepper wraps

Ingredients:
- 4 large portobello mushrooms, stems removed
- ¼ teaspoon salt, divided
- Freshly ground pepper to taste
- ¼ cup plain dry breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon minced fresh parsley
- 1 tablespoon extra-virgin olive oil
Instructions:
- Heat the oven to 230 °C. Apply cooking spray on a rimmed baking sheet or roasting pan.
- Place mushroom caps with the gill side facing up on the prepared pan. Sprinkle with a pinch of salt and pepper. Bake until soft, approximately 20 minutes.
- In the meantime, mix breadcrumbs, Parmesan cheese, parsley, oil, the remainder of the salt and pepper in a small bowl. Take the mushrooms out of the oven and put roughly 2 tablespoons of the breadcrumb mixture on each cap, spreading it evenly. Put it back in the oven and bake until the breadcrumbs turn golden, around 5 minutes.
