Grilled portobello & red pepper wraps

Discover the savory blend of grilled portobello mushrooms and roasted red peppers in these delicious wraps. Perfect for a healthy and flavorful meal.

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • ¼ teaspoon salt, divided
  • Freshly ground pepper to taste
  • ¼ cup plain dry breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon extra-virgin olive oil

Instructions:

  1. Heat the oven to 230 °C. Apply cooking spray on a rimmed baking sheet or roasting pan.
  2. Place mushroom caps with the gill side facing up on the prepared pan. Sprinkle with a pinch of salt and pepper. Bake until soft, approximately 20 minutes.
  3. In the meantime, mix breadcrumbs, Parmesan cheese, parsley, oil, the remainder of the salt and pepper in a small bowl. Take the mushrooms out of the oven and put roughly 2 tablespoons of the breadcrumb mixture on each cap, spreading it evenly. Put it back in the oven and bake until the breadcrumbs turn golden, around 5 minutes.
