Grilled pork chops and peach salad

Indulge in the delightful flavors of juicy grilled pork chops paired with sweet peaches in this vibrant and refreshing salad. Perfect for a sunny day!

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon soy sauce
  • salt and black pepper
  • 2 large tomatoes (cut into wedges)
  • 1 pint cherry tomatoes (blend of yellow and red)
  • 2 large peaches (cut into wedges)
  • 1 cup of corn kernels (cut from the cob)
  • 1/2 cup sliced red onion
  • 1/2 cup chopped cilantro
  • 3 tablespoons Badia Complete Seasoning Mix (divided)
  • 4 1- inch cut bone-in pork chops
  • 1 cup orange juice
  • 1 habanero pepper (seeds and stem removed, finely chopped)
  • 2 cloves of garlic (chopped)
  • 2 tablespoons honey
  • 5 green onion (sliced thin)
  • 1 jalapeno pepper (seeds and stem removed, finely minced)
  • 1 cup of cilantro leaves
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • salt and black pepper

Instructions:

  1. Mix together the olive oil, vinegar, soy sauce, salt, and black pepper in a medium bowl. Add both types of tomatoes, peaches, corn kernels, red onion, and cilantro to the bowl with the dressing. Stir well to ensure everything is coated. Taste and adjust seasoning as needed. Cover and place in the refrigerator until you are ready to serve.
  2. Heat up your grill to a medium-high temperature.
  3. Take 2 tablespoons of the Badia Complete Seasoning Mix and massage it into the pork chops. Put the seasoned pork chops in a large shallow dish. Set it aside.
  4. In another small bowl, blend the remaining 1 tablespoon of Badia Complete Seasoning Mix with orange juice, habanero pepper, garlic, and honey. Pour the marinade over the pork chops and cover the dish with plastic wrap. Let the pork chops marinate for a few minutes while you prepare the fresh herb salad for serving.
  5. Combine green onion, jalapeno pepper, cilantro, white wine vinegar, olive oil, salt, and black pepper in a small bowl. Set it aside for now.
  6. Place the pork chops on the preheated grill and cook for approximately 4 minutes on each side until they develop a nice char. The total cooking time of 8 minutes will yield medium-rare pork chops. Adjust cooking time based on your preferred level of doneness. Use a meat thermometer to ensure accuracy.
  7. Take the pork chops off the grill and let them rest for at least 5 minutes.
  8. Present the pork chops topped with the herb salad and accompanied by the tomato and peach salad. Serve immediately and enjoy!
