Grilled polenta salad with burrata

Ingredients:

  • 2 cups Water
  • 2 cups Milk, 2%
  • 1 teaspoon Salt
  • 1 cup Colavita Instant Polenta Cornmeal
  • 4 Medium tomatoes, chopped
  • 1 Small red onion, chopped
  • ¼ cups Basil, chopped
  • 2 tablespoons Colavita capers
  • 2 tablespoons Colavita Extra Virgin Olive Oil, plus more for grilling
  • 1 teaspoon Colativa Chardonnay White Wine Vinegar
  • Salt and pepper to taste
  • Handful of arugula
  • 230g Burrata
  • Colavita Balsamic Glace to drizzle

Instructions:

  1. Heat water, milk, and salt in a saucepan over medium heat until it simmers. Slowly stir in cornmeal, ensuring it blends smoothly. Cook for approximately 5 minutes, stirring occasionally, until the cornmeal is done. Take off the heat, transfer the cornmeal to a 10-inch circular dish, and level the top with a spatula. Let the polenta cool to room temperature, then refrigerate for at least 2 hours.
  2. While waiting, combine tomatoes, red onion, basil, and capers. Mix olive oil and vinegar in a small bowl. Pour the mixture over the tomatoes and mix well. Add salt and pepper to taste.
  3. Get the grill or stovetop grill pan ready. Slice the polenta into 12 wedges and brush both sides with olive oil. Grill each side for 3-5 minutes until the polenta turns golden brown.
  4. Put arugula on a large serving plate. Arrange the grilled polenta wedges on top, followed by the tomato mixture and burrata. Drizzle balsamic glace over the dish. Serve promptly.
