Grilled plum and pistachio salad

Delight in the unique blend of juicy grilled plums and crunchy pistachios in this vibrant and flavorful salad. Perfect for a refreshing and satisfying dish!

Ingredients:

  • 4 plums, pitted, halved and each half cut in 3
  • 2 tablespoons olive oil, divided 
  • 1/2 teaspoon kosher salt, divided 
  • 1 head bibb lettuce, torn into bite-sized pieces 
  • 1/4 cup chopped fresh basil leaves 
  • 1/4 cup chopped fresh mint leaves 
  • 1 tablespoon white balsamic vinegar 
  • 1/4 cup toasted pistachios, chopped 
  • 1/2 cup ricotta salata cheese shavings 

Instructions:

  1. Heat up a grill pan over medium-high heat.
  2. In a big bowl, mix the plums, 1 tablespoon of olive oil, and 1/4 teaspoon of salt together. Put the plum slices on the hot grill pan and grill until you see nice grill marks, about 1 to 2 minutes per side. Transfer them to a plate to cool down a bit.
  3. Incorporate the lettuce, basil, mint, white balsamic vinegar, the remaining 1 tablespoon of olive oil, and the remaining 1/4 teaspoon of salt into the large bowl. Use your hands to gently mix the greens until they are coated, making sure not to bruise the lettuce. Sprinkle the salad with the pistachios, then carefully place the plums on top. Finish off by sprinkling the ricotta shavings over the salad and serve.
