Grilled pizzas stuffed with cheese and radicchio salad

Ingredients:
- Three 8-ounce balls of pizza dough, thawed if frozen
- All-purpose flour, for dusting
- 170g freshly grated Parmigiano-Reggiano cheese (1 1/2 cups)
- 1 large red onion, thinly sliced
- 1 tablespoon chopped rosemary
- 1/4 cup plus 2 tablespoons unsalted raw pistachios, coarsely chopped
- Extra-virgin olive oil, for drizzling
Instructions:
- Place a pizza stone in the oven and preheat the oven to 500°F, giving the stone at least 30 minutes to heat up.
- Handle each portion of dough individually: On a floured surface, either roll or stretch the dough to form a 12-inch circle. Move the dough to a floured pizza peel. Sprinkle one-third of the cheese on top, ensuring a 1/2-inch border all around. Gently press the cheese onto the dough. Add one-third of both the onion and the rosemary on top.
- Transfer the pizza onto the stone and bake for approximately 4 minutes, until it turns lightly golden and bubbles start to appear. Sprinkle one-third of the pistachios over the pizza carefully and bake for an additional 2 minutes, until the crust turns brown and the onions become very tender. Move the pizza to a clean surface. Drizzle some olive oil over it, slice into wedges, and serve. Repeat the process with the remaining dough and toppings.
