Grilled pecorino with fava bean salad

Indulge in the flavors of grilled pecorino paired with fresh fava beans in this delectable salad. A delightful combination of smoky and earthy tastes awaits.

Ingredients:

  • 230g aged Pecorino, sliced into 1/2 inch slices
  • 20 – 25 pods fava beans
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 clove garlic, finely chopped
  • 5 leaves fresh mint, chiffonade
  • Kosher salt

Instructions:

  1. Peel the fava beans. Heat a big pot of salted water until it starts boiling. Cook fava beans in the boiling water for around half a minute to a maximum of 1 minute. Take out beans from water and remove their skins while they are still warm. Mix with olive oil, garlic, and freshly chopped mint. Add salt to taste.
  2. Cook the pecorino cheese on the grill until lightly browned on both sides and tender. Arrange the warm cheese on a plate and top with the fava beans. Pour over some olive oil and present.
