Grilled pecorino with fava bean salad

Ingredients:
- 230g aged Pecorino, sliced into 1/2 inch slices
- 20 – 25 pods fava beans
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 clove garlic, finely chopped
- 5 leaves fresh mint, chiffonade
- Kosher salt
Instructions:
- Peel the fava beans. Heat a big pot of salted water until it starts boiling. Cook fava beans in the boiling water for around half a minute to a maximum of 1 minute. Take out beans from water and remove their skins while they are still warm. Mix with olive oil, garlic, and freshly chopped mint. Add salt to taste.
- Cook the pecorino cheese on the grill until lightly browned on both sides and tender. Arrange the warm cheese on a plate and top with the fava beans. Pour over some olive oil and present.
