Grilled peaches & cream(y) mozzarella salad
Delight in the flavors of summer with this luscious Grilled Peaches & Creamy Mozzarella Salad. A perfect balance of sweet, savory, and creamy goodness!
Ingredients:
- 1 Large Ball Fresh Mozzarella
- 4 Peaches, just ripe
- 1 tablespoon minced shallot
- 2 tablespoons canola oil
- 1 bunch Boston or other soft lettuce, for more bite, add arugula
- 1/3 cup champagne vinegar
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1/2 cup olive oil
- salt & pepper to taste
- 1/3 cup torn basil leaves
Instructions:
- Combine finely chopped shallot with Champagne vinegar in a small bowl. Let it rest for 15 minutes. Blend in the lime juice, honey, salt, and pepper. Slowly add the olive oil while whisking. Set aside.
- Lay out the lettuce on a large serving dish.
- Slice the mozzarella in half and then into pieces that are 1/3 inch thick.
- Preheat the grill to high temperature.
- Slice the peaches in half and take out the pits. Coat them entirely with oil.
- Grill the peaches with the cut side down over medium-high heat for around 3 minutes or until there are grill marks and the peaches are starting to brown. Flip them over and grill for an additional 2-3 minutes, ensuring they are cooked through and warm. Move to a cutting board and cut each half into halves.
- Alternate the peach and mozzarella slices on top of the lettuce. Position the peaches with the cut sides facing upwards. Sprinkle with basil.
- Drizzle with the prepared vinaigrette and serve immediately. The perfect bite consists of a piece of lettuce, peach, and mozzarella. Be prepared for those delightful peach juices to dribble down your chin!
