Grilled peach salad

Ingredients:
- 2 firm, ripe medium peaches, unpeeled, quartered
- 2 ½ tablespoons extra-virgin olive oil, divided
- 3 tablespoons sherry vinegar
- 2 teaspoons honey
- ½ teaspoon salt
- ½ teaspoon coarse ground pepper
- 1 (200g) package small romaine heart leaves
- ⅓ cup finely chopped red bell pepper
- ⅓ cup loosely packed torn basil leaves
- ¼ cup toasted pine nuts (see Tip)
- 60g crumbled goat cheese
Instructions:
- Heat up a gas or charcoal grill to a high temperature of 450-500°F. Gently coat the exposed sides of the peaches with half a tablespoon of oil; place them on the hot grill grates. Grill the peaches, flipping them once, until you see grill marks and they start to soften but still maintain their shape, which should take about 4 to 5 minutes.
- Combine vinegar, honey, salt, pepper, and the remaining 2 tablespoons of oil in a small bowl.
- Place the romaine lettuce leaves on a large serving dish and layer with the grilled peaches. Sprinkle bell pepper, basil, pine nuts, and goat cheese on top. Drizzle the prepared dressing over the salad.
