Grilled peach salad

Delight in the flavors of summer with this refreshing grilled peach salad. Sweet peaches, mixed greens, and a zesty dressing combine for a delicious dish.

Ingredients:

  • 3 Large ripe peaches
  • 1 Large red onion
  • 230g Fresh mozzarella cubed
  • 2 cups Balsamic vinegar
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the balsamic vinegar in a small saucepan until it reaches a low boil. Continue heating until it thickens and reduces to about 1/2 cup, which should take around 15-30 minutes. Take caution not to let it burn. Allow it to cool completely. This can be prepared up to a week in advance.
  2. Halve the peaches and remove the pit. Slice the onion into 1/2" slabs after peeling. Coat both with olive oil and season with salt and pepper. Grill the peaches and onions for approximately 7 minutes, ensuring they develop pronounced grill marks and release their juices. For well-done onions, extend the grilling time. Once grilled, roughly chop the onions while keeping the pieces sizeable. Mix them with cubes of mozzarella.
  3. Arrange the grilled peaches, onions, and mozzarella on a large platter. Drizzle the balsamic reduction over the top. Enjoy!
