Grilled peach, arugula and blue cheese summer salad

Delight in this flavorful mix of grilled peaches, peppery arugula, and tangy blue cheese. Perfect for a refreshing summer meal.

Ingredients:

  • 2 Peaches
  • 1/2 Red Onion
  • 1/4 cup Blue Cheese, Crumbled
  • 3 tablespoons Olive Oil
  • 1 bunch Baby Arugula

Instructions:

  1. Lightly coat peaches with olive oil and grill over high heat for 30-40 seconds, then flip and grill for an additional 30-40 seconds at an angle.
  2. Thinly cut red onions, and marinate in a dish with the remaining olive oil and blue cheese.
  3. Mix arugula with marinated onions, olive oil, and blue cheese then add grilled peaches on top. Add salt and pepper to taste before serving.
