Grilled peach, arugula and blue cheese summer salad
Delight in this flavorful mix of grilled peaches, peppery arugula, and tangy blue cheese. Perfect for a refreshing summer meal.
Ingredients:
- 2 Peaches
- 1/2 Red Onion
- 1/4 cup Blue Cheese, Crumbled
- 3 tablespoons Olive Oil
- 1 bunch Baby Arugula
Instructions:
- Lightly coat peaches with olive oil and grill over high heat for 30-40 seconds, then flip and grill for an additional 30-40 seconds at an angle.
- Thinly cut red onions, and marinate in a dish with the remaining olive oil and blue cheese.
- Mix arugula with marinated onions, olive oil, and blue cheese then add grilled peaches on top. Add salt and pepper to taste before serving.
