Grilled peach and watercress salad
Indulge in the delicious flavors of grilled peach and peppery watercress salad, a perfect blend of sweetness and tanginess. Perfect for summer!
Ingredients:
- 4 cups watercress, or arugula
- 2 peaches
- 1/4 cup crumbled feta, or blue cheese
- 1/4 cup toasted walnuts, or pine nuts
- 1 tablespoon balsamic vinegar
- 1 tablespoon pomegranate molasses
- 1 tablespoon olive oil
Instructions:
- Preparing the salad is effortless. Begin by grilling the peaches. Simply halve the peach, remove the pit, and grill them on a hot grill. It will take approximately 8-10 minutes to achieve attractive grill marks and caramelize the peaches. Set them aside to cool.
- Then, combine the pomegranate molasses and balsamic vinegar. In case you have a thick, high-quality balsamic reduction, feel free to use it as it provides the desired sweetness and tanginess for the salad. Add in the olive oil and mix thoroughly.
- Once the grilled peaches have cooled, dice them into bite-sized pieces. Assemble the salad by arranging the salad leaves on a platter, followed by adding feta cheese, peaches, walnuts, and drizzling the prepared dressing. That's all there is to it - a straightforward, visually appealing, and delicious dish.
