Grilled onion salad with sherry vinaigrette

Ingredients:
- 1/4 cup Sherry wine vinegar
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated lemon peel
- 1 tablespoon chopped fresh oregano
- 1/2 cup olive oil
- 2 red onions, cut into wedges, stem end attached
- 4 cups mesclun
- 3/4 cup soft fresh goat cheese
- 1/4 cup chopped fresh mint
Instructions:
- Get the grill ready or heat up the broiler. Combine vinegar, lemon juice, lemon zest, and oregano in a medium bowl. Slowly mix in the oil. Add salt and pepper according to your taste. Coat both sides of the onions with some of the dressing. Season the onions with salt and pepper. Grill the onions until they are slightly charred and tender, turning them occasionally, for approximately 12 minutes. Place them on a plate to cool. Mix the greens with the rest of the dressing. Transfer them to a serving bowl. Arrange the grilled onions on top. Sprinkle with goat cheese and mint before serving.
