Grilled onion salad

Ingredients:

  • 2 medium red onions
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 small garlic clove, minced
  • 1 teaspoon fresh oregano, minced

Instructions:

  1. Slice the onions vertically into 1-inch wide wedges, keeping the layers together at the base. Mix the onion wedges gently with 1 tablespoon of olive oil, saving the rest of the oil for the dressing.Place the onion wedges on a grill over medium heat and cover them with an upside-down foil pan. Grill until soft (approximately 15-20 minutes), turning occasionally for an even cook.While the onions are grilling, make the dressing. Mix the vinegar, minced garlic, and oregano in a small bowl. Gradually pour in the remaining olive oil while whisking constantly.Mix the grilled onions with the dressing, and season with salt and pepper to your preference.
