Grilled nectarine salad
Indulge in the flavors of summer with this delightful Grilled Nectarine Salad. A perfect harmony of smoky, sweet, and tangy notes awaits in every bite.
Ingredients:
- 2 nectarines, halved and pitted
- Olive oil, for drizzling
- 2 teaspoons honey
- 2 teaspoons Dijon mustard
- 2 teaspoons white wine vinegar
- 1/2 cup olive oil
- Salt and freshly ground black pepper
- 1/2 cup slivered almonds
- 170g spring mix salad greens
- 60g Stilton, Gorgonzola or other blue cheese
Instructions:
- Preheat a grill pan on medium-high heat.
- Pour a small amount of olive oil over the nectarine halves. Cook with the cut side down for 2 to 3 minutes, flipping halfway through to get nice grill marks. Put aside.
- Combine honey, Dijon mustard, and vinegar in a mixing bowl. Gradually whisk in the olive oil until the mixture thickens. Season with salt and pepper, and stir well.
- Fry the slivered almonds in a small pan over medium-low heat until they start to turn golden brown.
- In a large bowl, mix the salad greens with some of the dressing until lightly coated. (You may not need all the dressing; save any extra for another salad later!) Add the warm toasted almonds to the salad.
- Distribute the salad evenly onto 4 plates. Top each serving with a nectarine half. Drizzle a bit more dressing over the nectarines. Use a fork to crumble the blue cheese into pieces and scatter over the plates.
