Grilled nectarine & burrata salad
Delight in the perfect blend of grilled nectarines and creamy burrata in this refreshing salad. A harmonious mix of sweet and savory flavors awaits!
Ingredients:
- 15g unsalted butter
- 2 tbsp caster sugar
- 50g whole pecans
- 3 ripe nectarines, stoned and cut into eighths lengthways
- 4 tbsp extra virgin olive oil, plus extra for brushing
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 2 x 100g balls of burrata or vegetarian alternative
- 70g rocket
- bunch of basil leaves, roughly torn
- pinch of chilli flakes
Instructions:
- Melt the butter and sugar in a small frying pan over medium heat. Add the pecans and stir to coat them in the buttery sugar. Cook for approximately 5 minutes, stirring until the pecans become crispy and caramelized. Transfer to a baking sheet lined with parchment paper and let it cool. Once cooled, roughly chop the pecans and keep them aside.
- Heat a griddle pan over high heat and coat the nectarine slices generously with olive oil. Grill for 1-2 minutes on each side until they are charred and caramelized. Transfer to a serving plate and set aside.
- Combine 4 tablespoons of olive oil, vinegar, and honey in a bowl. Season with salt and pepper to create a dressing.
- Arrange the burrata balls among the nectarines on a serving platter. Cut open the burrata, then place the rocket and basil around them. Drizzle the dressing over the salad, sprinkle with the pecans, and add a pinch of chili flakes before serving.
