Grilled mexican street corn salad

Ingredients:
- 1 1/2 cups mayonnaise
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 6 ears corn
- 3/4 cup crumbled cotija cheese or Parmesan
- 2 tablespoons chopped fresh cilantro
- 4 green onions, thinly sliced
- Juice of 2 limes
- Dash of hot sauce
Instructions:
- Preheat a grill pan over medium-high heat.
- Mix together the mayonnaise, chili powder, garlic powder, salt, and cumin in a large bowl. Spread the corn with the seasoned mayonnaise. Place the corn on the heated grill pan and cook, turning occasionally, until all sides are tender and slightly charred, approximately 10 to 12 minutes. Transfer the corn to a plate and allow it to cool slightly.
- Cut the corn kernels off the cobs using a sharp knife; put the kernels in the bowl with the leftover seasoned mayonnaise. Combine the cheese, cilantro, green onions, lime juice, and hot sauce in the bowl. Stir until everything is evenly coated and mixed. Serve the dish warm or at room temperature.
