Grilled kale salad with ricotta and plums

Indulge in the perfect blend of smoky flavors with this Grilled Kale Salad featuring creamy ricotta and juicy plums, a culinary masterpiece.

Ingredients:

  • tablespoons extra-virgin olive oil, divided
  • tablespoons balsamic vinegar
  • teaspoons chopped fresh thyme
  • teaspoon honey
  • Kosher salt, freshly ground pepper
  • medium plums, halved, pitted, thinly sliced
  • large or 16 small curly kale leaves
  • /4 cup fresh ricotta
  • 5 servings

Instructions:

  1. Mix together 3 tablespoons of oil, vinegar, thyme, and honey in a medium-sized bowl. Season the vinaigrette with salt and pepper according to your preference. Add the plums and mix well to ensure they are coated; then place the plums onto a plate.
  2. Prepare a medium-high heat grill using charcoal or preheat a gas grill to high temperature. Coat kale leaves with the remaining 1 tablespoon of oil and season with salt. Grill the kale, turning it over once, until it becomes crispy and slightly charred on the edges, approximately 2 minutes. Transfer the kale to a flat surface and allow it to cool down. Remove the thick center stems using a knife and dispose of them (you can simply trim off the tough ends from the smaller, more tender stems).
  3. Distribute the ricotta cheese evenly onto plates and season with salt and pepper. Give the vinaigrette a final stir. Tear the larger kale leaves into smaller pieces while leaving the smaller leaves whole. Place the leaves in a large bowl and toss them in some of the vinaigrette. Arrange the leaves on the plates. Top them with the plums and drizzle a bit of vinaigrette over the top.
