Grilled kale salad with paprika breadcrumbs

Ingredients:

  • day-old baguette, cut into 1-inch pieces (about 6 cups)
  • tablespoons olive oil, divided
  • teaspoon hot smoked Spanish paprika
  • cup plain whole-milk Greek yogurt
  • cup crème fraîche or sour cream
  • garlic cloves, finely grated
  • tablespoons fresh lemon juice
  • tablespoon honey
  • teaspoon kosher salt, plus more
  • Freshly ground black pepper
  • large bunches Tuscan kale, ribs and stems removed
  • apple, cored, very thinly sliced lengthwise
  • radishes, trimmed, very thinly sliced

Instructions:

  1. Heat the oven to 350°F. Mix bread with 4 tablespoons of oil on a baking sheet with edges and bake until they become crispy and turn golden brown, which usually takes around 15 to 20 minutes. Allow it to cool down. Put the bread in a food processor to create coarse crumbs with some larger pieces about the size of a pea. Transfer them to a small bowl, add paprika, and set it aside.
  2. While waiting, combine yogurt, crème fraîche, garlic, lemon juice, and honey in a medium-sized bowl. Slowly pour in 2 tablespoons of oil while whisking until everything is mixed well. Season the dressing with salt and pepper.
  3. Get the grill ready for medium-high heat. Coat kale with the remaining ½ teaspoon of kosher salt and the remaining 2 tablespoons of oil in a large bowl. Massage the leaves to make them softer. Grill the kale in batches, turning it regularly until it has a nice charred look and is slightly wilted, for about 2 minutes each batch. Once done, put it back in the bowl and let it cool slightly. Add apple and radish, mix them together. Pour the dressing over the salad and mix well.
  4. Present the salad with the reserved paprika breadcrumbs on top.
  5. Prepare the breadcrumbs in advance. They can be made a month ahead and stored in the freezer in an airtight container.
