Grilled heirloom tomato caprese salad

Ingredients:
- 4 heirloom tomatoes
- 340g fresh mozzarella cheese
- 1 tablespoon olive oil, plus additional for oiling grates
- Kosher salt and freshly ground black pepper
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 bunch fresh basil leaves
Instructions:
- Cut the tomatoes and mozzarella into slices that are 1/4 inch thick.
- Get a grill ready for cooking on medium heat. Pour olive oil over the tomato and mozzarella slices and add a bit of salt and pepper. Lightly grease the grill grates. Grill the tomato slices, turning them over once, for a few minutes on each side.
