Grilled heirloom tomato caprese salad

Indulge in the flavors of summer with this vibrant and refreshing grilled heirloom tomato caprese salad. Perfect for any occasion!

Ingredients:

  • 4 heirloom tomatoes
  • 340g fresh mozzarella cheese 
  • 1 tablespoon olive oil, plus additional for oiling grates 
  • Kosher salt and freshly ground black pepper 
  • 1/4 cup balsamic vinegar 
  • 2 tablespoons brown sugar 
  • 1 tablespoon honey 
  • 1 bunch fresh basil leaves 

Instructions:

  1. Cut the tomatoes and mozzarella into slices that are 1/4 inch thick.
  2. Get a grill ready for cooking on medium heat. Pour olive oil over the tomato and mozzarella slices and add a bit of salt and pepper. Lightly grease the grill grates. Grill the tomato slices, turning them over once, for a few minutes on each side.
  3. Mix the vinegar, sugar, and honey in a small bowl until they are well blended. Add salt and pepper according to your taste.
  4. Arrange the salad by layering tomato, basil, and mozzarella alternately. Drizzle the balsamic mixture over the salad and it's ready to be served.
