Grilled halloumi and kale salad
Indulge in a flavorful culinary experience with this grilled halloumi and kale salad. The perfect blend of savory cheese and nutritious greens.
Ingredients:
- 6 cups Lacinto or curly kale
- 1/2 cup raw red cabbage
- 2 tsp olive oil+
- 1 lemon (zest and juice)
- 1 package of Halloumi Cheese (8 oz.)
- sea salt and cracked black pepper to taste
Instructions:
- Rinse and pat dry the kale, remove stems and shred leaves into thin pieces using kitchen scissors. Transfer to a large salad bowl.
- Drizzle olive oil over the kale and knead with your hands for about 5 minutes.
- Introduce finely sliced cabbage, lemon peel, and juice from half a lemon.
- Sprinkle a bit of sea salt on top and allow it to soak in the flavors.
- Preheat your grill, using a cast iron grill pan or outdoor grill set to medium-high heat. No need for oil.
- While the grill is heating, cut the Halloumi into thick slices if not done already; it's recommended to have no more than 6 slices from an 8oz. package.
- Once the pan is sufficiently hot, place the Halloumi slices on it and monitor closely; each side should take only a couple of minutes, check for grill marks before flipping.
- Certain parts may soften more than others, but generally it should hold its shape. Using tongs, remove the slices from the grill and arrange them next to your salad.
- Squeeze the remaining lemon juice over the cheese. Optionally, sprinkle black pepper and any desired toppings before serving.
