Grilled halloumi and kale salad

Indulge in a flavorful culinary experience with this grilled halloumi and kale salad. The perfect blend of savory cheese and nutritious greens.

Ingredients:

  • 6 cups Lacinto or curly kale
  • 1/2 cup raw red cabbage
  • 2 tsp olive oil+
  • 1 lemon (zest and juice)
  • 1 package of Halloumi Cheese (8 oz.)
  • sea salt and cracked black pepper to taste

Instructions:

  1. Rinse and pat dry the kale, remove stems and shred leaves into thin pieces using kitchen scissors. Transfer to a large salad bowl.
  2. Drizzle olive oil over the kale and knead with your hands for about 5 minutes.
  3. Introduce finely sliced cabbage, lemon peel, and juice from half a lemon.
  4. Sprinkle a bit of sea salt on top and allow it to soak in the flavors.
  5. Preheat your grill, using a cast iron grill pan or outdoor grill set to medium-high heat. No need for oil.
  6. While the grill is heating, cut the Halloumi into thick slices if not done already; it's recommended to have no more than 6 slices from an 8oz. package.
  7. Once the pan is sufficiently hot, place the Halloumi slices on it and monitor closely; each side should take only a couple of minutes, check for grill marks before flipping.
  8. Certain parts may soften more than others, but generally it should hold its shape. Using tongs, remove the slices from the grill and arrange them next to your salad.
  9. Squeeze the remaining lemon juice over the cheese. Optionally, sprinkle black pepper and any desired toppings before serving.
