Grilled gruyère, nectarine, and honey tartines on sourdough

Ingredients:
- 4 slices sourdough bread, about 1-inch thick
- 2 tablespoons olive oil
- 2 nectarines or peaches (about 340g), pitted and sliced
- 110g Gruyère, sliced
- 1 tablespoon honey
- 2 teaspoons Sherry or red wine vinegar
- Kosher salt and freshly ground black pepper
- Salad or chips for serving
Instructions:
- Heat up the grill to a medium temperature and cover it with foil. Apply olive oil to both sides of the bread slices. Grill the bread on one side until it is slightly browned with grill marks, which should take around 2 minutes. Place nectarines and cheese on the toasted side of the bread slices; put the open-faced sandwiches back on the grill. Grill them with the lid on for another 2 to 3 minutes. Top the sandwiches with honey and vinegar, add salt and pepper to taste, and enjoy them with a side of salad or chips.
