Grilled fish sammies with garlic tartar sauce and baked waffle fries with spicy bloody ketchup and a slaw salad

Flavorful slaw salad with grilled fish sammies, zesty garlic tartar sauce, and crunchy waffle fries. Perfect blend of savory and tangy tastes!

Ingredients:

  • 450g store-bought waffle fries
  • 4 (6-ounce) fillets white fish, such as halibut, skinless
  • Salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil 
  • 4 crusty rolls, split
  • 3/4 cup mayonnaise
  • 1 clove garlic, grated
  • 3 tablespoons capers
  • 1/4 cup pitted chopped green olives
  • Handful flat-leaf parsley, finely chopped
  • 1 cup ketchup
  • 2 teaspoons Worcestershire sauce, eyeball it
  • 1 teaspoon hot sauce
  • 1 or 2 tablespoons prepared horseradish, your preference
  • 1 lemon
  • Celery salt, to season fries
  • 1/2 red onion, very thinly sliced
  • 8 green or red leaf lettuce leaves
  • Slaw Salad, recipe follows
  •  1 bulb fennel with tops, thinly sliced plus 1/4 cup fennel tops 
  • 1/2 head red cabbage, shredded
  • 1/4 cup honey 
  • 1/4 cup cider vinegar
  • 1 tablespoon poppy seeds 
  • 1 1/2 tablespoons toasted sesame seeds
  •  1/4 cup extra-virgin olive oil

Instructions:

  1. Preheat the oven to 220 °C and cook the fries for 20 minutes, or as per the instructions on the package, flipping them once. 
  2. Heat a pan or grill over medium-high heat. 
  3. Season the fish with salt and pepper, then cover it with approximately 1 tablespoon of extra-virgin olive oil. 
  4. Grill the bread rolls or broil them until they are browned in the middle of the oven, then set them aside. 
  5. Mix mayonnaise with minced garlic, capers, olives, and parsley. 
  6. Mix ketchup with Worcestershire sauce, hot sauce, horseradish, and plenty of black pepper. 
  7. Cook the fish for 3 to 4 minutes on each side until it is firm, not translucent, and fully cooked. Squeeze fresh lemon juice over the cooked fish. 
  8. Take the fries out of the oven and sprinkle them with celery salt and pepper. 
  9. Place the cooked fish on the bread rolls along with lettuce, red onion, and tartar sauce. Serve the fries with the spicy ketchup on the side.
  10. In a large mixing bowl, toss together the fennel, fennel fronds, and red cabbage. In a small separate bowl, mix the honey, apple cider vinegar, grilling seasoning, poppy seeds, and sesame seeds. Slowly whisk in the olive oil. Pour the dressing over the salad and mix well.
