Grilled eggplant and smoked mozzarella melts

Ingredients:
- 4 large slices country bread (1 inch thick)
- 2 medium eggplants, sliced 1/2 inch thick
- ¼ cup olive oil, plus more for serving
- Kosher salt and black pepper
- 1 clove garlic, halved
- 340g smoked mozzarella, cut into 8 slices
- 2 large tomatoes, sliced
- 1 cup fresh basil
- Green salad, for serving
Instructions:
- Preheat the grill until it reaches a medium heat. Once it's ready, use a wire brush to scrape and clean the grill grate. Right before grilling, apply some canola oil on the grill grate.
- Coat the bread and eggplant with olive oil and season them with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Grill the bread until it turns brown and crispy, approximately 1 to 2 minutes per side. Rub some garlic over each sliced piece. Then, cut each slice in half widthwise. Grill the eggplant slices, flipping them occasionally, until they become tender which takes about 6 to 8 minutes.
- Add the mozzarella on top of the bread and grill it covered, just until it becomes warm and starts to melt. Place the grilled eggplant, tomato, and basil on top. Drizzle some olive oil, sprinkle with salt and pepper, and serve it with the salad.
