Grilled cuban bread salad

Ingredients:

  • 4 slices Cuban bread or French bread (cut 1/2-thick)
  • Olive oil
  • 1/4 cup mixed chopped herbs (basil, parsley, thyme)
  • Salt and freshly ground pepper
  • 1 vine-ripened tomato, cut into 4 slices
  • 1/2 cup Spanish Tetilla cheese or Muenster or Jack
  • 4 cups mesclun greens
  • 4 hard cooked eggs, peeled and quartered
  • 1/4 cup sherry vinegar
  • 1 heaping teaspoon finely grated orange zest
  • 3/4 cup olive oil
  • 1 small shallot, finely chopped
  • Pinch of cumin
  • Salt and freshly ground pepper

Instructions:

  1. Preheat the grill until it reaches the desired temperature. Lightly coat both sides of the bread with olive oil and place them on the grill. Cook one side until it turns a light golden brown, then flip the bread over. Sprinkle one tablespoon of the mixed herbs onto each slice. In the meantime, brush oil onto each tomato slice and season with salt and pepper according to your preference. Grill each tomato slice for about a minute on each side, then immediately place a slice of tomato on top of each herb-covered bread. Sprinkle two tablespoons of cheese over the tomato slices, close the grill lid, and cook until the cheese starts to melt. Toss the mesclun salad with a few tablespoons of vinaigrette, then divide it among four plates. Place a slice of grilled bread on top of each salad and drizzle the remaining vinaigrette on top. Add some sliced hard-boiled eggs as a garnish. Combine all the ingredients in a bowl, whisk them together, and season with salt and pepper to your liking.
